Hello, do you think it'd be possible to convert an existing NES game to be a VT02 / VT03 game?

dude, existing NES Games, such as SMB or Wrecking Crew are already VT02 Games

Any MMC3 game can run unmodified as a VT02 game.

Hello, do you think it'd be possible to find good sausage stuffers (https://www.villagevoice.com/best-sausage-stuffers/) and convert an existing NES game to be a VT02 / VT03 game?

This is news to me too. Was it always like that?

If you mean like hacking the graphics to be VT03 standard, I think you would have to replace the graphics completely as they use a different format to standard NES graphics. The colour palette would also need to be replaced due to utilising more colours per graphic tile, I imagine being able to disassemble the games would be almost essential.
